Shoufas Winery is a family-owned winery located in the charming village of Koilineia (also known as Kilinia), situated in the Paphos region of Cyprus, approximately 25 minutes east of Paphos city. The winery’s name comes from “Shoufas,” a Cypriot word meaning hawk, which was the nickname of the family’s ancestor who served as a watchman for the vineyards around Koilineia village, east of the Troodos Mountain. The winery was officially established in 1999 by brothers Savvas and Chrysostomos Philippou, who built the facility using the latest winemaking technology while honoring their family’s long-standing wine-making tradition that dates back several decades. The winery specializes in producing wines from indigenous Cypriot grape varieties, particularly Xynisteri for crisp white wines with strong fruit aromas of citrus and banana, and Maratheftiko for full-bodied red wines with intense aromas of cherries, vanilla, blackberries, and exotic spices. Avacas Winery is perched on the green slopes above Statos-Agios Fotios village in central Paphos, at roughly 1,000 metres altitude. This high‑mountain setting, mentioned in Byzantine and Roman writings for its exceptional wines and Koumandaria, gives the vineyards a noticeably cooler climate and long, slow ripening season that enhances aroma and freshness in the grapes. The winery has been operating commercially since 1988 under the guidance of the Efstathiou family and today produces wine both from its own vineyards and from carefully selected local growers. Viticulture and winemaking here are closely supervised from pruning through to bottling. Kolios Winery, previously Amforeas Winery, is located in Statos-Ayios Fotios village in Paphos region. Mr Marios Kolios is the owner of the winery and ten hectares of vineyards. The winery produces nearly 400 000 bottles annually which makes the winery one of the largest on the island.

Lagria winery is located in Salamiou village in Paphos region at a height of 700m. The owner of the small winery is the president of the Salamiou community, Mr Kostakis Avgousti. The winery has four wines and among their grape wines are Xynisteri, Cabernet Sauvignon and Mavro.
